Parameters
- config: DateTimeVariableType
  Configuration for the date/time variable including:
  
  question - Question text displayed to the user
  
  exampleText? - Example text for the variable
  
  defaultValue? - Default value for the variable
  
  And all other properties from the base Variable type
Returns DateTimeVariableType<string | Date>
